Tomorrow is Simeon’s 1st birthday.  We are having a little thing here like I usually do for the kids.  Nothing really big.  Just close family and I think that means it is going to be just us.  LOL  ANywho, I made him his cake…I will post pics later.  Got him a few toys.  Little booger is RUNNING.  He started walking 2 months ago.  He truly is adorable.  I know Pat and Mom would adore him.

I have been trying my hand out in the kitchen with some things I never cooked before.  I made Beef Manhatten the other night.  Now, that is my fave dish when we eat out but I am really picky about it.  Let me tell you, I think I made a killer!  It was awesome.  Best I ever had!  Everyone else really liked it too!  Then tonight I made BarBQ.  First time for that too.  And it was also very very good.  I made Polish Mistakes tonight for tomorrow and used the leftover sausage/cheese mix to make a breakfast quiche.  Looks yummy!  I go in spurts cooking.  I cannot bake worth a hoot but I am not too awful bad a cooking.  I love presentation but I also like a ton of substance.  So give me food and a lot of it!  LOL

Makes me remember a dish my Mom would make…*snicker*  She took it to all pitch ins.  Church, work, you name it.  It was beef stew in a huge bread bowl.  Everyone would ask her what her recipie is and she always said, it was a secret.  I remember when she told me about this lady in our church that made killer chicken and noodles and everyone always raved but she would NEVER tell her secret.  Mom was at her house one day helping her cook and saw all kinds of Sweet Sue empty cans in her trash!  **lol**  Well, my mom’s beef stew was store bought hawaiian bread and Dinty Moore!!  *snort*  I have several recipies like that myself.  But I will NEVER tell.

Ok, just one…

I get rave reviews on this pasta I make…but it is a Secret!

Gotta run.  Allan thinks he is dying in the other oom with all 4 kids.  *snort*

OH!  BTW!  I got a big ole gift card to Roberts Day Spa for Mother’s Day!  (they remembered how I love the facial and massage!)  I also got a Mother’s Ring with my kids and my moms stones.  Iwear it with my wedding set.  It is beautiful!  Yeah!

Happy Mother’s Day to all you Moms.

This will be my first mothers day without my mommy.  I have to say it is very depressing.  Extreemly so.  I am also having ahard time with guilt.  I am so sad that I did not appreciate my mom enough while she was here.  I did not fully understand how she felt without her mom.  How sad SHE may have been each Mother’s Day, holiday, birthday, ect.  Too worried thinking of myself I am sure.  Realizing how much Mom suffered the past year.  Wondering if it was just another complaint and now I realize how horrible it was for her.  It is eating me up.  Put it this way, I have been doing a ton of praying and asking the Lord to help me and He does.  It is when I get my hopes and mind off Him that I struggle so.

Mommy?  Can you see me from where you are?  Can you hear me?  I love you and I appreciate you and thank you for how you raised me.  For being the wonderful example you were.  I am proud to be your daughter and miss you so very much.

Happy Mother’s Day, Mommy.
